Bread is a product obtained by fermentation, shaping, proofing and baking of water and flour (ordinary or whole-wheat) based dough. The dough may be often enriched with other ingredients and packaged in different ways, depending on the place where it is prepared.

The product is gently handled during proofing so as to avoid any stress to the dough and therefore achieve a "home-made" result.
The following cooling may take place at room temperature or in controlled temperature chambers (ATU). The freezing chambers are customised in order to achieve the best heat exchange between the product and the air inside the chamber.
